You'll need to work through the single player championships in order to unlock the various professional riders.

Listen to Darth, for he speaks the truth. You get certain riders for per seed. Somewhere you can view them, and it shows what seed is needed to unlock that rider.

lol ok im an idiot i saw the seed then but my brain thought it said "speed" not "seed" but thanks for the info guys
